Easy and delicious blackberry crumb pie with store-bought crust for a perfect summer treat.
Ingredients:
  • 4 cups fresh blackberries
  • 1 cup white sugar
  • 1 cup water
  • 0.25 cup cornstarch
  • 1 teaspoon lemon juice
  • 1.5 cups all-purpose flour
  • 0.75 cup light brown sugar
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground cinnamon
  • 0.75 cup unsalted butter, cut into pieces
  • 1 prepared pastry for a single-crust pie
Instructions:
  • Heat the oven to 375°F (190°C).
  • Mash blackberries in a bowl until smooth with a few chunks left for texture.
  • In a saucepan, mix sugar, water, cornstarch, and lemon juice. Whisk until smooth, then bring to a boil over high heat. Cook for 3 minutes, stirring constantly. Remove from heat and gently fold in blackberries. Set aside.
  • In a separate bowl, mix together flour, brown sugar, salt, and cinnamon. Then, incorporate butter using your hands until you achieve a crumbly texture.
  • Gently mold pie pastry into pie pan, spoon blackberry filling on top, and generously sprinkle crumble over the filling.
  • Bake in a preheated oven until the crust is cooked and golden on the bottom, for 40 to 50 minutes. Remove from the oven and cool for about 1 hour to allow the filling to set.
