Create your own paneer with just milk, lemon juice, salt, and a thermometer, then elevate your Indian dishes!
Ingredients:
  • 4 quarts whole milk
  • 0.5 teaspoon sea salt
  • 0.5 cup lemon juice
Instructions:
  • Place a moistened muslin or cheesecloth inside a colander and position it over a bowl or the sink.
  • In a large saucepan, gently warm the milk over medium-low heat until it reaches 200 degrees F (93 degrees C). Stir in salt, then slowly drizzle in the lemon juice, 1 tablespoon at a time, while stirring continuously until curds form.
  • Carefully transfer the curds into the muslin-lined colander. Gently fold the muslin over the curds and place a weight on top, like a water-filled bowl. Allow the curds to drain for 2 to 3 hours.
