Homemade Caesar dressing with mayo, anchovies, garlic, lemon, and Parmesan for a rich, creamy flavor surpassing store-bought.
Ingredients:
  • 6 cloves garlic, peeled, divided
  • 0.75 cup mayonnaise
  • 6 tablespoons grated Parmesan cheese, divided
  • 5 anchovy fillets, minced
  • 1 tablespoon lemon juice, or more to taste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 0.25 cup olive oil
  • 4 cups day-old bread, cubed
  • 1 head romaine lettuce, torn into bite-sized pieces
Instructions:
  • Assemble all your ingredients.
  • Finely chop 3 cloves of garlic and transfer to a small bowl. Combine with mayonnaise, 2 tablespoons grated Parmesan cheese, anchovies, lemon juice, Worcestershire sauce, and mustard; mix thoroughly. Season with salt and black pepper to taste. Chill in the refrigerator until needed.
  • In a large skillet over medium heat, warm oil. Quarter the remaining 3 cloves of garlic and add to the sizzling oil. Cook until browned, then remove from the skillet. Add bread cubes to the flavored oil, cook until lightly browned, and transfer to a plate. Season with salt and pepper.
  • In a large bowl, combine lettuce with dressing, the rest of the Parmesan cheese, and seasoned bread cubes. Toss thoroughly to ensure everything is evenly coated.
  • Enjoy immediately!
