Simple homemade marzipan: almonds + sugar.
Ingredients:
  • 1.75 cups whole almonds
  • 1.25 cups confectioners' sugar, or more as needed
  • water as needed
  • 3 drops almond extract
Instructions:
  • Place almonds in a bowl, pour boiling water over them, and allow to cool until easy to handle.
  • Peel almonds individually, then drain in a colander.
  • In a food processor with a metal blade, combine almonds and confectioners' sugar until a paste forms. Gradually add cold water, 1/2 to 1 teaspoon at a time, as needed for moisture. Scrape the sides for even blending. Stir in a few drops of almond extract for enhanced flavor. Process until the marzipan is smooth and no longer grainy.
  • Cover the marzipan in plastic wrap and keep it in a cool, dry place.
