Indulge in nostalgia with a creamy tuna noodle casserole, perfect for feeding a group without breaking the bank.
Ingredients:
  • 1 (12 ounce) package egg noodles
  • 4.25 teaspoons kosher salt, divided
  • 4 tablespoons salted butter, divided
  • 5 teaspoons olive oil, divided
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 small white onion, minced
  • 0.25 cup all-purpose flour
  • 2 cups milk
  • 1.5 cups chicken stock
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon ground black pepper
  • 1.5 cups shredded white Cheddar cheese
  • 1 cup frozen sweet peas
  • 2 (6 ounce) cans tuna, drained
  • 1 cup panko bread crumbs
  • 0.25 teaspoon ground paprika
  • 2 tablespoons finely chopped fresh parsley
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease a 9x13-inch baking dish.
  • Bring a large pot of salted water to a vigorous boil. Add egg noodles and cook for about 6 minutes until al dente. Drain the noodles and return them to the pot.
  • In a large skillet over medium-high heat, melt 2 tablespoons butter with 1 tablespoon oil. Sauté mushrooms and onion until mushrooms are softened and onions are translucent, about 4 minutes. Stir in the rest of the butter until melted. Sprinkle flour over the veggies and cook, stirring constantly, for 1 minute. Pour in milk and stock, and bring to a simmer, stirring often, for 5 minutes. Finish by stirring in lemon juice, Dijon mustard, 1 teaspoon salt, and pepper.
  • Combine the sauce mixture with the noodles. Mix in 1 cup of Cheddar cheese, peas, and tuna. Transfer the mixture to the baking dish and sprinkle the remaining Cheddar cheese on top.
  • Combine bread crumbs, remaining 2 teaspoons of oil, remaining 1/4 teaspoon of salt, and paprika in a small bowl. Evenly sprinkle the bread crumb mixture over the casserole.
  • Bake in the preheated oven for 25-30 minutes until golden and bubbly. Finish with a sprinkle of fresh parsley before serving.
