Delicious morning glory muffins filled with coconut, whole wheat flour, flax meal, cranberries, apples, carrots, and pineapple.
Ingredients:
  • 1 cup brown sugar
  • 1 cup unbleached all-purpose flour
  • 1 cup whole wheat flour
  • 0.75 cup dried cranberries
  • 0.5 cup shredded sweetened coconut
  • 0.25 cup ground flax seed
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking soda
  • 1 large Granny Smith apple, shredded
  • 0.75 pound carrots, shredded
  • 1 cup crushed pineapple, drained
  • 0.5 cup vegetable oil
  • 0.5 cup applesauce
  • 0.5 cup coarsely chopped pecans
  • 3 large eggs
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease 12 large muffin cups.
  • Combine brown sugar, all-purpose flour, whole wheat flour, cranberries, coconut, flax seed, cinnamon, baking soda, and salt in a bowl. Mix in grated apple and carrots, then add pineapple, vegetable oil, applesauce, pecans, eggs, and vanilla extract until just combined. Pour batter into muffin cups and bake.
  • Bake until a toothpick inserted into the center of a muffin comes out clean, approximately 35 minutes in the preheated oven.
