White chocolate and macadamia cookies

Time-honored recipe with a sweet touch that only gets better with age.
Ingredients:
  • 125g butter, softened
  • 70g caster sugar
  • 70g brown sugar
  • 1 egg
  • 115g plain flour
  • 115g self-raising flour
  • 1 10g toasted macadamias, coarsely chopped
  • 1 80g block white chocolate, coarsely chopped
Instructions:
  • Preheat the oven to 180°C and prepare 2 baking trays by lining them with parchment paper.
  • In a mixing bowl, cream the butter and sugars until pale and creamy using an electric mixer. Incorporate the egg and mix just until combined. Fold in the flours with a wooden spoon until fully combined. Lastly, add the macadamias and chocolate, stirring to evenly distribute.
  • Take a tablespoon of the mixture and shape into balls onto lined trays, spacing them 5cm apart. Gently flatten each ball with your palm. Bake in a preheated oven for 12 minutes, swapping trays halfway, until lightly golden and nearly crisp. Transfer to a wire rack to cool completely after removing from the oven.
