Bake gourmet cafe-style muffins in your own kitchen.
Ingredients:
  • 262.50 gm self-raising flour, sifted
  • 375.00 ml untoasted muesli, plus extra to sprinkle
  • 90.00 gm brown sugar
  • 1.25 gm mixed spice
  • 125.00 ml low fat plain yoghurt
  • 64.38 gm low fat milk
  • 57.50 gm canola oil
  • 1 granny smith apple, skin on, cored, grated
Instructions:
  • Preheat your oven to a moderate 180°C. Prepare a 12-hole muffin pan by lining it with paper patty cases or spraying it with oil.
  • In a large mixing bowl, blend together flour, muesli, sugar, and spice, then create a well in the center of the mixture.
  • Whisk together yogurt, milk, oil, and egg in a large jug. Pour the mixture into the dry ingredients with the apples, gently mixing until just combined.
  • Fill the cases two-thirds full with the mixture. Top them off with a sprinkle of extra muesli. Bake for 20-25 minutes or until a skewer comes out clean. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before storing in an airtight container.
