Birthday Cake Whoopie Pies

Elevate a birthday bash with a colorful, festive rainbow chip cake mix and sprinkles for a fun and delicious dessert.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Party Rainbow Chip Cake Mix
  • 3 tablespoons milk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1/4 cup butter, softened
  • 4 oz (half of 8-oz package) cream cheese, softened
  • 1 1/4 cups powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • Betty Crocker™ Decors rainbow mix candy sprinkles
Instructions:
  • Preheat your oven to 350°F, then either lightly spray your cookie sheets with cooking spray or line them with parchment paper or silicone baking mats.
  • In a large bowl, use a wooden spoon to combine all cookie ingredients until a wet dough forms. Grease your hands generously with cooking spray, then roll teaspoonfuls of dough into 2-inch balls and arrange them about 1 inch apart on cookie sheets.
  • Bake for 10 minutes, or until the edges are set and slightly golden brown. Let cool for 2 minutes, then transfer to cooling racks. Allow to cool completely for about 15 minutes before serving.
  • In a medium bowl, use an electric mixer on medium speed to beat all filling ingredients for 2 to 3 minutes until smooth. Cover and refrigerate until ready to assemble.
  • Spread a generous amount of filling on one cookie, then sandwich with another cookie, pressing gently. Roll the sides of the pies in colorful sprinkles and refrigerate covered until ready to indulge.
