Spiced cinnamon chips elevate classic Biscoff cookies for a deliciously sweet and flavorful treat.
Ingredients:
  • 1.25 cups cookie butter (such as Biscoff®)
  • 1 cup unsalted butter, softened
  • 1 cup vanilla sugar
  • 1 cup dark brown sugar
  • 0.25 cup shortening
  • 2 eggs
  • 1 vanilla bean, split and seeds scraped away
  • 1 tablespoon warm water
  • 1.5 teaspoons baking soda
  • 2.75 cups all-purpose flour, sifted
  • 1 cup cinnamon chips (such as Hershey's®)
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Combine cookie butter, butter, vanilla sugar, brown sugar, shortening, eggs, and vanilla bean in a bowl. Use an electric mixer to cream them together until smooth. In a separate small bowl, dissolve baking soda in warm water, then mix it into the creamed mixture.
  • In a separate bowl, mix the flour and salt, then gradually add this mixture to the cookie butter, blending well. Finally, stir in the cinnamon chips.
  • Place dollops of dough onto ungreased cookie sheets; shape with your fingers into elegant meringue peaks.
  • Bake in the preheated oven for 8 to 9 minutes, until the edges are set. Let it stand for 1 minute before transferring to a wire rack to cool completely.
