Biscuit and Strawberry Jam Cobbler

Indulge in a delightful cobbler made with homemade strawberry jam and fluffy Bisquick™ biscuits.
Ingredients:
  • 2 lb fresh strawberries, stems removed, cut into 1/2-inch pieces
  • 2 cups sugar
  • 1 tablespoon fresh lemon juice
  • 1 cup Original Bisquick™ mix
  • 1/3 cup milk
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon sugar
Instructions:
  • Preheat oven to 375°F.
  • In a 3-quart saucepan, simmer Jam ingredients over medium-high heat, stirring often, for approximately 15 minutes until the mixture thickens and reduces to about 3 cups. Optionally, gently mash with a potato masher. Take off the heat and let it cool slightly.
  • Mix the Biscuit ingredients in a medium bowl until evenly incorporated.
  • Spread jam evenly in a 9-inch pie plate or 8-inch square pan. Place 6 spoonfuls of biscuit dough on top. Sprinkle dough with sugar to taste.
  • Bake until biscuits are golden brown and cooked through, about 25-30 minutes. Serve warm.
