Savory Southern breakfast biscuits with herb-infused Italian gravy and turkey sausage.
Ingredients:
  • 0.5 cup skim milk, or as needed
  • 1.5 teaspoons white vinegar
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.33333334326744 teaspoon sea salt
  • 1 pinch dried oregano
  • 1 pinch dried basil
  • 1 pinch ground thyme
  • 0.25 cup cold unsalted butter
  • 4 ounces turkey breakfast sausage
  • 1 tablespoon unsalted butter
  • 0.25 teaspoon salt
  • 0.25 teaspoon Italian seasoning (such as Trader Joe's® 21 Seasoning Salute)
  • 1.5 cups skim milk
  • 0.5 cup chicken broth
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Combine milk and vinegar in a measuring cup and let it sit until it curdles, about 5 to 10 minutes.
  • In a large bowl, combine flour, baking powder, baking soda, sea salt, oregano, basil, and thyme. Add cold butter and mix using a pastry cutter until mixture resembles coarse crumbs.
  • Create a crater in the dry mix and gently mix with a wooden spoon, adding 1/4 cup of curdled milk at a time. Pause when it reaches a slightly sticky, moldable dough consistency, stirring until just mixed. You might not use all the milk.
  • Transfer the mixture to a lightly floured surface, sprinkle a touch of flour on top, and delicately fold the dough over itself 5 to 6 times. Shape the dough into a 1-inch thick disk, being careful not to overwork it.
  • Slice through the dough with a 1-inch thick cutter, giving it a slight twist as you go. Arrange the biscuits on a baking sheet in 2 rows, making sure they touch to rise evenly. Reform the dough, and cut out additional biscuits as needed.
  • Bake in the oven until light golden brown and fluffy, about 10-15 minutes.
  • Brown the sausage in a skillet over medium heat for about 5 minutes, using a wooden spoon to break it up as it cooks, while the biscuits are baking.
  • Melt butter in a saucepan. Stir in flour, salt, and seasoning. Cook and stir for 1 minute. Whisk in milk and continue cooking until gravy thickens. If needed, adjust consistency with chicken broth. Serve over split biscuits.
