Easy Bisquick pumpkin pie made without a crust using evaporated milk and creamy pumpkin purée.
Ingredients:
  • 0.75 cup white sugar
  • 0.5 cup biscuit baking mix
  • 2 tablespoons butter
  • 1 (12 fluid ounce) can evaporated milk
  • 1 (15 ounce) can solid pack pumpkin puree
  • 2.5 teaspoons pumpkin pie spice
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and gently grease a 9-inch pie pan.
  • In a large bowl, mix together sugar and baking mix. Add butter, milk, and eggs; then beat in pumpkin, spice, and vanilla until the mixture is smooth. Pour the batter into a prepared pie pan.
  • Bake in the oven at the specified temperature for 50 to 55 minutes until a knife inserted in the center comes out clean. Chill any extra pie in the refrigerator.
