Indulge in a delicious and effortless gluten-free pumpkin pie made with Bisquick® mix for a festive treat.
Ingredients:
  • 1 1/4 cups canned pumpkin (not pumpkin pie mix)
  • 1/2 cup Bisquick™ gluten free mix
  • 1/2 cup sugar
  • 3/4 cup evaporated milk
  • 1 tablespoon butter, softened
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 eggs
  • Whipped topping, if desired
Instructions:
  • Preheat the oven to 350°F and generously coat a 9-inch glass pie plate with cooking spray.
  • Gently measure Bisquick and level off with a knife. In a large bowl, whisk all ingredients except whipped topping until well combined. Transfer mixture into a pie plate.
  • Bake for 35 to 38 minutes until a knife inserted in the center comes out clean. Let it cool for 30 minutes, then refrigerate for about 3 hours until well chilled. Serve with whipped topping and store covered in the refrigerator.
