Black Bean Bagel Sandwiches

Savory vegetarian BLT on a toasted bagel.
Ingredients:
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1/3 cup thick & chunky salsa
  • 1/4 teaspoon ground cumin or chili powder
  • 4 bagels, cut horizontally in half
  • 2 plum (Roma) tomatoes, sliced
  • Lettuce leaves
Instructions:
  • Blend beans, salsa, and cumin in a food processor until smooth.
  • Generously layer 1/4 cup of the flavorful bean mixture onto each of the 4 delicious bagel halves. Add fresh slices of tomato and crisp lettuce, then finish by placing the remaining heavenly bagel halves on top.
