Zesty avocado-lime black bean hummus - perfect for any party!
Ingredients:
  • 1 cup cooked black beans
  • 0.5 avocado, pitted and peeled
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon white wine vinegar
  • 1 clove garlic
  • 1 lime wedge, juiced
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon roasted ground cumin
  • 0.5 teaspoon coarse sea salt
  • 1 pinch ground ancho chile pepper
Instructions:
  • In a food processor or blender, mix black beans, avocado, oil, vinegar, garlic, lime juice, coriander, cumin, sea salt, black pepper, and ancho chile until desired consistency is reached.
