Blend black beans in food processor, garnish with olives, serve with toasted pita.
Ingredients:
  • 1 (15 ounce) can black beans; drain and reserve liquid
  • 1 clove garlic
  • 2 tablespoons lemon juice
  • 1.5 tablespoons tahini
  • 0.75 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon paprika
  • 10 Greek olives
Instructions:
  • Separate beans from liquid, keeping both.
  • In a food processor, blitz garlic until minced. Then add black beans, 2 tablespoons of bean liquid, lemon juice, tahini, cumin, salt, and cayenne pepper. Blend until smooth, making sure to scrape down the sides as necessary.
  • Adjust the flavor with more bean liquid, lemon juice, tahini, cumin, salt, and cayenne to your liking. Serve in a bowl, dust with paprika, and garnish with Greek olives.
