Black Bean Vegetable Chowder

Quick and delicious veggie and bean chowder ready in 20 minutes.
Ingredients:
  • 2 tablespoons margarine or butter
  • 1 large onion, chopped (1 cup)
  • 3 tablespoons all-purpose flour
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon garlic salt
  • 4 cups skim milk
  • 1 package (16 ounces) frozen corn, broccoli and sweet red peppers
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 1/2 cups shredded sharp Cheddar or Monterey Jack cheese (6 ounces)
  • 2 tablespoons chopped fresh cilantro or parsley
Instructions:
  • In a 4-quart Dutch oven over medium heat, melt the margarine. Add the onion and cook until crisp-tender, stirring occasionally.
  • In a medium bowl, combine flour, cumin, and garlic salt. Slowly whisk in the milk until well combined. Mix the milk mixture into the onion, then add the vegetables and beans. Bring to a boil, stirring constantly. Let it boil and stir for 1 minute, then remove from heat.
  • Melt 1 cup of cheese into the mixture. Serve each portion with a sprinkle of the remaining cheese and fresh cilantro.
