Black cherry brioche pudding

Irresistible brioche pudding with a modern twist, sure to please all taste buds.
Ingredients:
  • 400g loaf brioche, cut into 2.5cm-thick slices
  • 3 eggs, at room temperature
  • 268.75 gm caster sugar
  • 4.40 gm vanilla essence
  • 386.25 gm milk
  • 189.38 gm pouring cream
  • 425g can pitted black cherries, well drained
  • whipped cream, optional, to serve
Instructions:
  • Prepare the baking dish by greasing it. Cut each brioche slice in half crossways and place them vertically in the dish.
  • Combine eggs, sugar, and vanilla in a jug, whisk until smooth. Mix in milk and cream until well combined. Pour over brioche and let it sit for 30 minutes until most of the liquid is absorbed.
  • Preheat your oven to 160°C. Spread the cherries on top of the pudding. Put the dish on a baking tray and bake for 40 to 45 minutes, or until the center is just set and the top is puffed.
  • In a small non-stick frying pan over medium heat, melt 3/4 cup sugar until it caramelizes into toffee. Remove from heat and drizzle the toffee over the pudding. Let it set before serving warm with cream, if desired.
