German cake topped with rich chocolate ganache.
Ingredients:
  • 340g (2 1/4 cups) self-raising flour
  • 100g (1/2 cup) brown sugar, firmly packed
  • 30g (1/4 cup) cocoa powder
  • 350g dark chocolate, chopped
  • 250g butter, chopped
  • 3 eggs
  • 125ml (1/2 cup) milk
  • 80ml (1/3 cup) kirsch
  • 300ml ctn Pure double thick cream, whipped
  • 2 x 425g cans stoneless black cherries, drained
  • 150g dark chocolate, chopped
  • 80ml (1/3 cup) thickened cream
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Line a 22cm round cake pan with baking paper, then mix flour, sugar, and cocoa in a large bowl.
  • Create a luscious blend of melted chocolate and butter in a bowl suspended over a saucepan of gently simmering water, ensuring the bowl doesn't touch the water. Combine this heavenly mixture with flour, eggs, and milk. Transfer the batter to a pan and bake for 40-45 minutes or until a skewer inserted at the center emerges clean.
  • Prepare the luscious chocolate ganache by combining the chocolate and cream in a microwave-safe bowl. Heat on medium power, stirring every minute until silky and fully melted. Allow it to rest for 30 minutes to cool and thicken to perfection.
  • Cut the cake in half horizontally, then brush the cut sides with aromatic kirsch. Place the bottom piece of the cake on a beautiful serving plate. Spread it with luscious cream and top with juicy black cherries. Add the remaining cake layer and generously spread it with smooth ganache. Enjoy the indulgent masterpiece you've created!
