Low-fat cherry cake made with fat-free condensed milk and oil substitute, topped with cherries.
Ingredients:
  • 1 (14 ounce) can fat free sweetened condensed milk
  • 0.75 cup oil substitute
  • 0.66666668653488 cup packed brown sugar
  • 1 egg white
  • 1.75 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup boiling water
  • 1 cup semisweet chocolate chips
  • 1 (21 ounce) can cherry pie filling
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C, then generously coat a 12-cup, fluted tube pan with cooking spray.
  • Mix together the flour, cocoa, baking soda, baking powder, and salt.
  • Mix together condensed milk, oil substitute, brown sugar, eggs, and egg white in a large bowl until well combined. Slowly add the flour mixture to the milk mixture and stir until just moistened. Gently incorporate water, then fold in the chips. Transfer the batter into the prepared pan.
  • Bake for 35 to 40 minutes, or until a toothpick inserted comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring to a plate and topping with cherry filling.
