Indulgent black forest pancake cake: chocolate pancakes, cherry puree, and whipped cream layers.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup dark cocoa powder
  • 0.25 cup white sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 tablespoon water, or as needed
  • 0.5 cup cherry puree
  • 2 tablespoons vodka
  • 1 cup whipped cream
  • 6 sweet cherries on stem
  • 0.25 cup chocolate shavings, or to taste
Instructions:
  • In a blender, mix milk and eggs until smooth. Add flour, cocoa powder, sugar, baking powder, and salt; blend until thoroughly combined. If needed, add water 1 tablespoon at a time for desired consistency.
  • Preheat a lightly oiled griddle over medium-high heat. Pour 1/3 cup batter onto the griddle and cook until bubbles form and edges are dry, for 2 to 3 minutes. Flip and cook until golden brown on the other side, for another 2 to 3 minutes. Repeat with remaining batter to make a minimum of 6 pancakes. Transfer pancakes to a wire rack to cool.
  • Combine the cherry puree and vodka in a bowl.
  • Begin by delicately spreading a layer of cherry puree on one pancake and adding a beautiful swirl of whipped cream along the edge. Place another pancake on top to create a lovely stack. Continue layering the pancakes with cherry puree and whipped cream until you have used them all. Finish with a generous topping of sweet cherries and delicate chocolate shavings. Slice the cake into portions using a serrated knife.
