Black Forest Cobbler

Decadent cherry cobbler with a rich chocolate twist.
Ingredients:
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 7 cups pitted red tart cherries, (about 2 pounds)
  • 1/4 teaspoon almond extract
  • 3/4 cup Gold Medal™ all-purpose flour
  • 1/4 cup baking cocoa
  • 1 tablespoon sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons butter or margarine
  • 1/2 cup milk
  • Cream or ice cream, if desired
Instructions:
  • Preheat your oven to 400°F. Combine 1/2 cup of sugar and cornstarch in a 2-quart saucepan, then add the cherries. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil and stir for 1 minute before adding almond extract. Transfer the mixture to an ungreased 2-quart casserole dish and keep it warm in the oven.
  • Combine flour, cocoa, 1 tablespoon of sugar, baking powder, and salt in a small bowl. Use a pastry blender or crisscrossing 2 knives to cut in butter until the mixture resembles fine crumbs. Stir in milk and drop 6 spoonfuls of dough onto the hot fruit mixture.
  • Bake without a cover for 25-30 minutes, or until the topping has solidified. Enjoy warm with a dollop of cream.
