Ingredients:
  • 125g butter or margarine
  • 100g caster or raw sugar
  • 2 eggs
  • 125ml plain yoghurt
  • 155g self-raising flour
  • 4.00 gm baking powder
  • 45g dark cocoa, sifted
  • 125ml milk
  • 200g pitted cherries, halved
  • 125g butter
  • 130g icing sugar mixture
  • 1 tsp vanilla paste
  • 20.60 gm milk
  • 12 whole cherries, with stem on
Instructions:
  • Preheat your oven to 180C and line a 12-hole muffin tin with 12 cupcake wrappers.
  • In a bowl, cream butter and sugar until light and creamy. Then, mix in the eggs until well combined.
  • Combine yogurt with flour, baking powder, cocoa, cherries, and milk, gently folding until mixed.
  • Transfer the mixture into the muffin tins and bake until golden brown and cooked through, about 40 minutes. Once baked, take them out of the tin and let them cool to room temperature.
  • Create a luscious icing by mixing the butter, sugar, and vanilla paste until smooth. Slowly incorporate milk until reaching a luxurious, smooth spreadable texture.
  • Sprinkle each cupcake with a dusting of icing sugar and finish with a cherry on top.
