Create a show-stopping Black Forest Pavlova that will leave everyone wanting seconds.
Ingredients:
  • 6 egg whites
  • 322.50 gm caster sugar
  • Pinch cream of tartar
  • 10.00 gm cornflour
  • 2 litres choc-vanilla swirl ice cream
  • 150g fresh cherries
  • 18.15 gm toasted flaked coconut
  • 62.50 ml chocolate topping
Instructions:
  • Preheat oven to 120C (100C fan-forced).
  • Prepare the baking tray by greasing and lining it with baking paper, then mark a 22cm circle on it. Beat the egg whites with an electric mixer until soft peaks form.
  • Slowly incorporate the sugar, 1 tablespoon at a time, mixing until fully dissolved after each addition (approximately 10 minutes). Then, mix in the cream of tartar, cornflour, and vanilla.
  • Beat until combined, then spoon meringue onto tray and shape into a circle. Bake for 1 hour to 1 hour 15 minutes until firm. Allow to cool in oven with door ajar. Finish by topping with ice-cream right before serving.
  • Garnish with cherries, coconut, and topping. Serve right away.
