Whip up a crowd-pleasing dessert with ease. This upsized version is sure to satisfy!
Ingredients:
  • 2 x 415g cans stoneless black cherries in syrup
  • 30.00 gm boiling water
  • 6.00 gm powdered gelatine
  • 500g bought chocolate cake (see note)
  • 62.50 ml brandy (optional)
  • 85.80 gm cornflour
  • 141.90 gm caster sugar
  • 643.75 gm milk
  • 200g dark chocolate
  • 2 x 250g packets cream cheese, softened
  • 300ml thickened cream
  • 125.00 ml dry-roasted hazelnuts, chopped
Instructions:
  • Separate cherries from their syrup by draining them, saving 1 1/2 cups of syrup in a bowl. Pour boiling water into a heatproof jug, sprinkle gelatine over it, stir until dissolved, and then mix it into the reserved syrup.
  • Remove the icing from the cake and discard. Cut the cake into 3cm pieces. Place the cake pieces in a 6cm-deep, 22cm x 30cm dish. Drizzle brandy over the cake if desired. Pour the syrup mixture over the cake. Add cherries on top. Chill in the refrigerator for 30 minutes or until set.
  • In a saucepan, whisk together cornflour and half of the sugar. Slowly pour in milk while stirring constantly until smooth. Place the saucepan over medium heat and cook, stirring, for 5 minutes until the mixture boils and thickens. Remove from heat. Coarsely chop half of the chocolate and stir it into the cornflour mixture until melted. Pour the chocolate mixture over the cherries and allow it to rest for 15 minutes.
  • With an electric mixer, blend the cheese and the remaining sugar until creamy. Mix in the cream until combined. Spread the cream mixture over the chocolate layer. Cover and refrigerate for 4 to 6 hours until set. Use a vegetable peeler to create long, thin curls from the remaining chocolate. Sprinkle the chocolate curls over the trifle, then add nuts on top. Serve and enjoy!
