Elevated Black Forest cake transformed into a decadent trifle.
Ingredients:
  • 20.00 gm cornflour
  • 125ml cherry
  • 75g caster sugar
  • 80ml kirsch
  • 300ml thickened cream
  • 24.00 gm icing sugar, sifted
  • 1 chocolate cake (see Notes), chilled
  • Grated chocolate, to garnish
  • 160ml milk
  • 200ml pure (thin) cream
  • 3 egg yolks
  • 40.00 gm caster sugar
  • 40.00 ml cherry jam
Instructions:
  • Combine cornflour with 2 tablespoons of cherry juice. Heat the remaining juice with sugar in a pan over medium-low heat for 2 minutes, stirring until sugar dissolves. Pour in the cornflour mixture and cook for 1-2 minutes until the sauce thickens. Mix in cherries and kirsch, then cool off the heat. Refrigerate until ready to use.
  • 1. Heat milk and cream in a pan until almost boiling. Remove from heat. 2. Whisk egg yolks and sugar until smooth. Gradually mix in the hot milk. 3. Return mixture to pan over low heat. Stir for 4-5 minutes until thickened. 4. Strain the custard, cool for 15 minutes, then stir in jam. 5. Chill before serving.
  • Whisk the cream and icing sugar until soft peaks form. Cut the cake into 3 even layers. Place one layer in a 2-liter serving bowl, trimming if needed. Spread half the custard over it, followed by a third of the cherries. Repeat the layers and finish with the last cake layer. Cover with whipped cream and arrange the remaining cherries on top. Chill for a minimum of 2 hours for flavors to meld. Garnish with grated chocolate before serving.
