Vegetarian slow cooker soup with black lentils, carrots, turnips, tomatoes, and ginger, ideal for Meatless Monday.
Ingredients:
  • 1.5 cups black lentils
  • 2 quarts vegetable broth
  • 3 cups diced tomatoes
  • 10 carrots, peeled and diced
  • 1 onion, cut into 1/2-inch dice
  • 2 small turnips, peeled and diced
  • 1 green bell pepper, diced
  • 3 tablespoons unsalted butter
  • 2 tablespoons minced ginger
  • 2 cloves garlic, minced
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon ground cumin
Instructions:
  • In a microwave-safe bowl, place black lentils and cover with 4 cups of water. Microwave for 5 minutes until softened. Stir, adding more water if necessary, then microwave for an additional 5 minutes. Drain and rinse the lentils.
  • In a large slow cooker, mix together vegetable broth, tomatoes, carrots, onion, turnips, green bell pepper, butter, ginger, garlic, coriander, cumin, salt, and lentils.
  • Cook on High for 4 to 6 hours until the carrots are tender.
