Black noodle salad with lentils and pink grapefruit recipe

Impressive black noodle salad, perfect for entertaining or a healthy veggie dinner.
Ingredients:
  • 225g pkt Wellness Road Black Rice Noodles with Chia
  • 150g Organic Green Beans, halved
  • 400g can organic lentils, rinsed, drained
  • 1 small Organic Red Onion, thinly sliced
  • 1 Ruby Red grapefruit, peeled
  • 40g Organic Baby Spinach
  • 36.40 gm Organic Extra Virgin Olive Oil
  • 24.00 gm Wellness Road Hulled Tahini
  • 28.60 gm organic or raw honey
  • 62.50 ml chopped Organic Natural Almonds
Instructions:
  • Boil noodles in a large saucepan for 8 mins until tender. Add beans for the last 2 mins of cooking. Rinse in cold water, drain, and transfer to a large bowl.
  • Segment the grapefruit over a bowl to capture the juice by using a small sharp knife. Mix grapefruit segments with noodle mixture, lentils, onion, and spinach in the bowl. Gently toss everything together to combine.
  • In a small bowl, mix together the oil, tahini, honey, and reserved grapefruit juice until well blended.
  • Spread the noodle mixture elegantly on a platter. Scatter with almonds. Drizzle the dressing generously over the salad and season to perfection before serving.
