Make Chinese-style black pepper chicken at home with crispy fried chicken and peppers in a flavorful soy, wine, and black pepper sauce over rice.
Ingredients:
  • 1/4 cup cornstarch
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon freshly ground black pepper
  • 1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
Instructions:
  • Prep your fresh, high-quality ingredients.
  • Combine cornstarch, soy sauce, Shaoxing wine, and pepper in a large bowl until a thick mixture forms. Add chicken pieces and coat them well. Allow the mixture to sit at room temperature for 15 minutes.
  • In a medium bowl, combine chicken broth, oyster sauce, Shaoxing wine, soy sauce, water, cornstarch, and pepper to make the Black Pepper Sauce. Whisk together until smooth.
  • In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Brown half of the chicken until cooked through, about 5 minutes. Transfer to a plate and set aside. Repeat with the remaining chicken. Remove all chicken from the skillet.
  • Pour the last tablespoon of vegetable oil into the skillet. Add minced garlic and ginger, cook and stir until aromatic, about 30 seconds. Toss in bell pepper and onion, continue to cook and stir until they are crisp-tender, for 2 to 3 minutes.
  • Add the Black Pepper Sauce to the skillet and simmer until it thickens, which should take 2 to 3 minutes. Then, reintroduce the cooked chicken to the skillet and stir until everything is well coated with the sauce. Serve the dish right away over a bed of cooked white rice.
