Black sesame ice cream cones

Enhance ice cream with rich black sesame flavor, prepare one day ahead.
Ingredients:
  • 100g sesame seeds
  • 165g caster sugar
  • 600ml thickened cream
  • 4.40 gm vanilla bean extract
  • Waffle cones, to serve
Instructions:
  • Finely grind all sesame seeds except for 1 tsp using a coffee grinder or small food processor.
  • In a saucepan, bring sugar and 1 cup (250ml) water to a boil over medium heat. Stir and cook for 3-4 minutes until slightly reduced. Remove from heat and whisk in cream, vanilla, and ground sesame seeds. Let it sit until cool to allow the flavors to infuse.
  • Once cooled, whisk the mixture once more and then strain it through a sieve. Use the back of a spoon to push the sesame seed pulp against the sieve to extract the richest color and flavor. Refrigerate the mixture for 3 hours or overnight until it thickens.
  • Churn the mixture in an ice cream machine following the manufacturer's guidelines. Alternatively, freeze in a shallow container for 2 hours until edges are frozen, then beat with electric beaters and refreeze. Repeat this process 2 or 3 times. Finally, transfer the mixture to a container and freeze overnight until firm.
  • Serve the ice cream in waffle cones and sprinkle with the sesame seeds you set aside.
