Blackberry and Mascarpone Crumble Bars

Indulgent mascarpone and juicy blackberries elevate these crumble bars into a portable gourmet treat.
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup almond meal
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1 cup cold unsalted butter, cut into 1-inch cubes
  • 1 (8 ounce) container mascarpone cheese
  • 1 medium lemon, zested and juiced, divided
  • 4 cups fresh blackberries
  • 0.25 cup white sugar, or more to taste
  • 3 tablespoons cornstarch
  • 1 teaspoon orange liqueur
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and grease a 9x13-inch baking pan.
  • Combine flour, almond meal, sugar, baking powder, cinnamon, and salt in a bowl. Incorporate butter until it forms pea-sized pieces. Stir in egg and vanilla extract until dough is crumbly.
  • Press half of the dough into the bottom of the pan, reserving the rest for the topping.
  • Bake in the preheated oven for 15 to 20 minutes until edges just start to turn brown. Take out from the oven, let it cool, and keep the oven on.
  • Combine mascarpone cheese, sugar, half of the lemon zest, and half of the lemon juice in a bowl, and mix until smooth for the mascarpone filling.
  • In a separate bowl, mix together blackberries, sugar, remaining lemon zest, remaining lemon juice, cornstarch, orange liqueur, and salt to create the blackberry filling.
  • Smooth the luscious mascarpone filling over the cooled bottom crust. Top it off with the vibrant blackberry filling and sprinkle the reserved dough in delightful crumbles evenly over the top.
  • Bake until the filling bubbles and the top crust is golden brown, approximately 40 to 45 minutes. Let it cool to room temperature, around 30 minutes. For optimal flavor, chill in the refrigerator for 8 hours to overnight before slicing into 16 bars.
