Blackberry and peach crisp

Delicious crunchy fruit dessert, ideal for post-dinner indulgence.
Ingredients:
  • 8 large peaches
  • 3 x 175g punnets blackberries or youngberries
  • 100g plain flour
  • 42.00 gm lemon juice
  • 55g caster sugar
  • 165g brown sugar
  • 45g rolled oats
  • 105g pecan
  • 125g unsalted butter, chilled
Instructions:
  • 1. Preheat the oven to 190°C. Quickly blanch the peaches in boiling water for 30 seconds, then transfer to a bowl of iced water to cool. Peel, remove stones, and cut the peaches into quarters. Combine peaches with blackberries, 1 tablespoon flour, lemon juice, and caster sugar in a bowl. Mix well.
  • Combine the remaining flour, cinnamon, brown sugar, oats, and pecans in a separate bowl. Grate the butter over the mixture, then use your fingertips to rub the butter in until it forms fine clumps.
  • Distribute berry mixture into 8 ovenproof dishes, each with a 300ml-capacity. Sprinkle pecan topping generously on top. Bake until golden and serve.
