Indulge with a luxurious Easter chocolate cake for grown-ups.
Ingredients:
  • 250g butter, chopped
  • 250g good-quality dark chocolate, roughly chopped
  • 84.98 gm milk
  • 215.00 gm caster sugar
  • 4 eggs, at room temperature, separated
  • 82.50 ml plain flour
  • 150g frozen blackberries
  • Solid chocolate Easter eggs, to serve
  • Extra blackberries, to serve
  • Cocoa powder, to serve
Instructions:
  • Preheat oven to 200°C/180°C. Grease and line a 23cm springform pan with baking paper. Melt butter in a saucepan over medium heat and set aside.
  • In a large heatproof bowl, mix chocolate and milk together. Set it over a saucepan of simmering water, ensuring the base of the bowl doesn't touch the water. Heat, stirring with a metal spoon, until the mixture is melted and smooth. Use an electric hand mixer to blend in the sugar. Remove the bowl from heat and let it sit for 10 minutes to cool slightly.
  • One at a time, gently incorporate the egg yolks into the rich chocolate mixture, ensuring thorough blending after adding each one. Pour in the melted butter and stir until fully combined.
  • Sift flour onto the chocolate mixture and gently fold. Whisk egg whites in a separate bowl until soft peaks form, then gently fold into the chocolate mixture. Sprinkle over blackberries and gently fold until combined.
  • Spread the mixture evenly in the pan. Bake for 15 minutes until it rises. Lower the oven temperature to 160°C and bake for an additional 50 minutes or until a skewer inserted in the center comes out clean. Allow the cake to cool completely in the pan (no need to worry if it sinks slightly in the middle).
  • Transfer the cake to a serving plate. Top with chocolate eggs and blackberries, then dust with cocoa. Enjoy slices with mascarpone or thick cream, if preferred.
