Blackberry jalapeño jelly: Sweet, spicy condiment for cheese made with fresh jalapeños, sugar, and pectin.
Ingredients:
  • 1 (1.75 ounce) package powdered pectin
  • 0.5 cup white sugar
  • 4 cups blackberry juice
  • 1 green jalapeno pepper, minced
  • 1 red jalapeno pepper, minced
  • 3.5 cups white sugar
  • 5 half pint canning jars with lids and rings
Instructions:
  • In a bowl, combine pectin crystals with 1/2 cup of sugar. In a saucepan, mix blackberry juice, pectin-sugar mixture, green jalapeño, and red jalapeño and bring to a boil for 1 minute. Stir in 3 ½ cups of sugar and continue boiling until dissolved, about 1 minute. Remove from heat and gently stir for 5 minutes to remove bubbles and foam.
  • Carefully transfer the mixture into clean jars, making sure to leave a 1/4 inch space at the top. Process the jars in a hot water bath to seal them. Remember to refrigerate the jelly after opening.
