Spicy blackberry-jalapeno glazed spiral-cut ham - perfect for Easter brunch or dinner.
Ingredients:
  • 2 fresh jalapeno peppers
  • 12 ounces frozen blackberries
  • 1 cup water
  • 0.5 cup brown sugar
  • 0.25 cup honey
  • 0.25 cup orange juice
  • 0.25 cup orange-flavored liqueur
  • 1 tablespoon minced fresh garlic
  • 2 teaspoons orange zest
  • 1 (12 pound) spiral-sliced, fully-cooked smoked ham
Instructions:
  • Position the oven rack 6 inches from the heat source and preheat the broiler to high. Arrange jalapeno peppers on a baking sheet.
  • Char the jalapenos in the preheated oven, flipping every few minutes, until the skin is blackened and bubbling, about 8 to 10 minutes.
  • After roasting, transfer the jalapeno peppers to a resealable plastic bag to steam for 5 to 10 minutes. Once cool, peel off the blackened skin, deseed, and finely chop the peppers.
  • In a saucepan over medium heat, mix jalapeno peppers, blackberries, water, brown sugar, honey, orange juice, orange-flavored liqueur, garlic, and orange zest. Simmer for 5 to 10 minutes. Lower the heat and simmer until the glaze thickens, about 5 to 10 more minutes. Use a potato masher to crush the blackberries and remove from heat.
  • Lower oven heat to a cozy 325 degrees F (165 degrees C), then nestle the ham in a roasting pan and delicately brush with a hint of glaze before gently covering with aluminum foil.
  • Roast in the hot oven, brushing with glaze every 20 minutes, until the thermometer reads at least 145 degrees F (63 degrees C) at the center, approximately 3 hours. Take the ham out, apply more glaze, and allow it to rest for 10 minutes before cutting.
