Buttery biscuits filled with blackberry jam - a perfectly sweet pair.
Ingredients:
  • 175g butter, at room temperature, cubed
  • 80g (1/2 cup, lightly packed) brown sugar
  • 4.40 gm vanilla extract or essence
  • 1 egg, at room temperature
  • 115g (3/4 cup) plain flour
  • 3.00 gm baking powder
  • 20g (1 tbsp) butter, extra, at room temperature
  • 120g (2/3 cup) pure icing sugar, sifted
  • 21.00 gm fresh lemon juice
  • 90g (1/4 cup) blackberry jam
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays with non-stick baking paper.
  • In a medium bowl, use electric beaters to whip together the butter, brown sugar, and vanilla extract until light and creamy. Then, add the egg and beat until well combined.
  • Combine the sifted flour and baking powder with the butter mixture using a wooden spoon until a soft dough forms, then use your hands to bring the mixture together.
  • Form heaping teaspoons of mixture into balls and arrange on lined trays, spacing them about 4cm apart. Flatten each biscuit to approximately 5mm thickness using the back of a spoon. Bake in a preheated oven, rotating trays halfway through, for 12 minutes or until lightly golden. Cool on a wire rack and repeat with the rest of the mixture.
  • Using an electric mixer, whisk together additional butter, powdered sugar, and lemon juice in a small bowl until fully incorporated.
  • Take half of the biscuits and generously spread them with zesty lemon icing. Then, take the remaining biscuits and generously spread them with sweet jam. Create delightful sandwich pairs with the iced and jam biscuits. Allow them to sit for 30 minutes until the icing has beautifully set.
