Pumpkin spice muffins: cozy and comforting, with a touch of butter. Perfect for a delicious breakfast.
Ingredients:
  • 1 cup milk
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup packed dark brown sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon pumpkin pie spice
  • 0.5 teaspoon salt
  • 1.5 cups fresh blackberries
  • 0.25 cup turbinado raw sugar
Instructions:
  • Preheat the oven to a delightful 400 degrees F (200 degrees C), then prepare a 12-cup muffin tin by greasing or lining it. Finally, mix together the milk, egg, butter, and vanilla extract in a bowl until well combined.
  • Combine flour, oats, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt in a bowl. Create a well in the center and pour in the egg mixture. Mix until just combined, then delicately fold in the blackberries. Divide the batter evenly among the muffin cups and sprinkle with turbinado sugar.
  • Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
