Delicious blackberry jam filled shortbread bars with a hint of cardamom and a sprinkle of confectioners' sugar.
Ingredients:
  • 2 cups unsalted butter, softened
  • 4 egg yolks
  • 4 cups all-purpose flour
  • 2 cups white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cardamom
  • 0.33333334326744 teaspoon salt
  • 1 cup blackberry jam, at room temperature
  • 0.25 cup confectioners' sugar
Instructions:
  • Using an electric mixer, whip butter in a bowl until it turns light and fluffy. Add egg yolks to the butter one at a time, making sure to blend thoroughly after each addition.
  • Combine flour, white sugar, baking powder, cardamom, and salt in a bowl. Gently fold the flour mixture into the butter mixture until just combined. Divide dough in half and tightly wrap each in plastic wrap. Freeze for a minimum of 3 hours.
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Evenly grate 1 ball of frozen dough into the bottom of a 9x13-inch baking pan. Spread blackberry jam over the grated dough, leaving a 1/2-inch space around the edges. Finally, grate the second ball of frozen dough over the jam layer.
  • Bake until golden brown in the preheated oven for 30 to 40 minutes. Once the shortbread has cooled, dust with confectioners' sugar and slice into bars.
