Blackened Salmon Pasta Salad

Elevate your pasta salad with flavorful blackened salmon, vibrant peppers, veggies, and sweet pineapple for a delectable twist.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 2 (4 ounce) salmon steaks
  • 2 tablespoons grapeseed oil, divided
  • 1 pinch blackened seasoning, or to taste
  • 0.5 cup crushed pineapple
  • 0.5 cup chopped cucumber
  • 0.5 cup chopped yellow onion
  • 1 (6 ounce) can black olives, drained
  • 1 small head broccoli, cut into bite-sized florets
  • 6 Brussels sprouts, thinly sliced
  • 4 banana peppers, seeded and sliced
  • 1 medium red bell pepper, chopped
  • 1 medium orange bell pepper, chopped
  • 1 medium yellow bell pepper, chopped
  • 1 medium tomato, cored, seeded, and diced
  • 3 sprigs fresh thyme, leaves stripped and chopped
  • 0.5 cup mayonnaise, or to taste
  • 0.5 cup red wine and vinegar salad dressing
Instructions:
  • Bring a generously salted large pot of water to a vigorous boil. Add penne and cook, stirring occasionally, until al dente, about 11 minutes. Drain pasta.
  • Gently dry salmon with paper towels. Drizzle with 1 tablespoon of grapeseed oil and generously season with blackened seasoning for a burst of flavor.
  • Heat the remaining grapeseed oil in a smoking hot cast iron skillet. Turn on your oven vent. Add salmon and cook for 4 to 4 1/2 minutes per side until easily flaked with a fork, flipping only once. Set aside to cool while preparing the pasta salad.
  • In a large bowl, toss together pasta, pineapple, cucumber, onion, olives, broccoli, Brussels sprouts, banana peppers, bell peppers, tomato, and thyme. Add mayonnaise and salad dressing to your liking. Gently incorporate flaked salmon into the pasta salad.
