Spicy blackened salmon with tender juicy inside, served with homemade avocado salsa.
Ingredients:
  • 1 avocado, diced
  • 1/3 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 2 teaspoons diced jalapeno, seeds removed
  • 1/4 teaspoon salt
  • 2 (8 ounce) skin-on salmon filets
  • 1 1/2 tablespoons blackened seasoning
  • 1 tablespoon olive oil
Instructions:
  • In a small bowl, mix together ripe avocado, diced onion, fresh cilantro, zesty lime juice, finely chopped jalapeno, and a pinch of salt. Set aside for the flavors to meld.
  • Lay the salmon, skin side down, on a clean surface. Divide the blackened seasoning between the two filets and massage onto all sides of the salmon.
  • In a large skillet over medium-high heat, warm oil. Cook filets, skin side up, for 5 minutes. Flip using tongs, skin side down, and cook until fish flakes easily with a fork, about 2 more minutes. Serve with avocado salsa.
