Elevate fish and chips with spicy blackened salmon and flavorful garlic smashed potatoes.
Ingredients:
  • 5.00 gm ground paprika
  • 2 tsp dried oregano
  • 2.40 gm salt
  • 2.50 gm ground cumin
  • 1 tsp ground allspice
  • 1/2 tsp garlic powder
  • 1/4 tsp ground cayenne pepper
  • 6 (about 200g each, 2cm thick) salmon fillets, skin on
  • 80ml (1/3 cup) extra virgin olive oil
  • 1kg chat (small coliban) potatoes
  • 6 garlic cloves, coarsely chopped
  • Salt & freshly ground black pepper
Instructions:
  • In a small bowl, mix together paprika, oregano, salt, cumin, allspice, garlic powder, and cayenne pepper.
  • Coat the salmon evenly with 1 tablespoon of oil and generously season with the spice mixture. Transfer the salmon to a glass or ceramic dish, cover with plastic wrap, and chill in the fridge for 10 minutes to enhance the flavors.
  • In a large saucepan, cover potatoes and garlic with cold water and bring to a boil over high heat. Cook uncovered for 15 minutes until tender. Drain, then return to the pan. Add remaining oil and crush with a fork. Season with salt and pepper, cover to keep warm.
  • 1. Preheat a large heavy-based frying pan over medium heat. Place the salmon in the pan skin-side down and cook for 3 minutes per side for medium doneness or until cooked to your preference. Remove the salmon from the pan and transfer to a plate. Cover with foil and let it rest for 2-3 minutes.
  • Plate the salmon and potatoes, then serve promptly with a side of vibrant orange, tomato & basil salsa.
