Transformed classic BLT burger into a delicious and shareable pasta salad.
Ingredients:
  • 250g dried farfalle pasta
  • 4 Made Thin Sliced Streaky Bacon Rashers, chopped
  • 400g punnet tomato medley, small tomatoes halved, large tomatoes quartered
  • 1 avocado, sliced
  • 50g mixed salad leaves
  • 82.50 ml small fresh basil leaves
  • 36.40 gm extra virgin olive oil
  • 40.00 ml red wine vinegar
  • 5.90 gm wholegrain mustard
  • 82.50 ml shaved parmesan
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions. Drain and rinse in cold water, then drain well.
  • Heat a frying pan over high heat. Cook bacon, stirring occasionally, until crisp, about 3 to 4 minutes. Transfer bacon to a paper towel-lined plate to drain.
  • Combine tomatoes, avocados, salad leaves, fresh basil, cooked pasta, and crispy bacon in a large serving bowl. Gently toss until mixed well.
  • In a small bowl, combine oil, vinegar, and mustard. Season with salt and pepper, whisk until well combined. Drizzle dressing over the salad, toss gently to coat. Sprinkle with Parmesan and serve.
