Bloomin' brilliant brownies

Decadent and foolproof chocolate brownies that are irresistibly gooey.
Ingredients:
  • 200 g quality dark chocolate (70%)
  • 250 g unsalted butter
  • 75 g dried sour cherries optional
  • 50 g chopped nuts optional
  • 80 g quality cocoa powder
  • 65 g plain flour
  • 1 teaspoon baking powder
  • 360 g caster sugar
  • 4 large free-range eggs
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4 and line a 24cm square baking tin with greaseproof paper. Break the chocolate into a large bowl, add the butter, and melt over simmering water. Stir in cherries and nuts (if using). In a separate bowl, sift cocoa powder and flour, add baking powder and sugar, then combine. Mix dry ingredients into the chocolate mixture. Beat eggs and stir until silky. Pour batter into the tin and bake for about 25 minutes. Brownies should be slightly springy outside and gooey inside. Cool in the tin, then cut into squares. Serve with crème fraîche or yoghurt mixed with orange zest. Enjoy!
