Crispy double-dipped blooming onion served with spicy mayo sauce.
Ingredients:
  • 0.5 cup mayonnaise
  • 2 tablespoons cream-style horseradish sauce
  • 2.25 teaspoons ketchup
  • 0.25 teaspoon paprika
  • 1 pinch ground black pepper
  • 1.5 teaspoons salt
  • 1.5 teaspoons cayenne pepper
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon dried oregano
  • 0.125 teaspoon ground cumin
  • 1 large onion
  • 2 quarts vegetable oil for deep-frying
Instructions:
  • Prepare the zesty dipping sauce by mixing mayonnaise, horseradish, ketchup, paprika, salt, black pepper, and cayenne pepper in a small bowl, then chill until ready to serve.
  • In a large bowl, whisk together milk and egg. In another bowl, mix flour, salt, cayenne pepper, black pepper, garlic powder, thyme, oregano, and cumin.
  • Prepare the onion by trimming 3/4 to 1 inch off the top and bottom, removing the skin, and cutting out the 1-inch core from the center. Slice the onion vertically 3/4 of the way down, then turn it 90 degrees and slice again to create 16 sections, being mindful not to cut through the bottom.
  • Gently separate petals, coat in milk mixture, then cover with flour mixture. Sprinkle flour between petals, dip again in both mixtures. Chill battered onion in the fridge for 15 minutes, then heat oil.
  • Drizzle oil to cover the onions in a deep fryer or deep pot. Heat the oil to 350 degrees F (175 degrees C).
  • Sauté onion in hot oil until golden brown, approximately 10 minutes. Place on a rack or paper towels to drain.
  • Create a wide opening in the center of the onion to perfectly hold the bowl of dipping sauce, then serve while still warm.
