Crunchy blooming onion with Chex® cereal coating for perfect dipping!
Ingredients:
  • 1/2 cup mayonnaise
  • 2 to 3 tablespoons chopped canned chipotle chiles in adobo sauce (from 7-oz can)
  • 2 tablespoons crumbled cooked bacon
  • 1 cup Corn Chex™ cereal
  • 1 cup Wheat Chex™ cereal
  • 1 cup Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground red pepper (cayenne)
  • 1/2 teaspoon ancho chile powder
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1 cup milk
  • 2 eggs
  • 2 large sweet onions
  • Vegetable oil for deep frying
Instructions:
  • Combine Dip ingredients in a small bowl, cover, and chill until serving.
  • Crush the cereals and combine them with flour, salt, and spices in a large bowl. In a separate large bowl, whisk together the milk and eggs.
  • Trim the pointed end of the onion and peel it, keeping the stem intact. Remove a 1-inch diameter core from the middle. Carefully cut the onion into 16 sections without cutting all the way to the bottom to create "petals." Coat the onion with cereal mixture, getting the coating between the petals. Dip the onion in egg mixture, then coat with cereal mixture again for a perfectly crispy finish.
  • Continue the layering process with the rest of the onion slices, cereal mixture, and egg mixture.
  • In a deep fryer or heavy saucepan, add oil to just cover the onion and heat to 350°F. Carefully lower one coated onion at a time into the hot oil using a slotted spoon. Fry for 3 minutes, then turn the onion and fry for an additional 3 to 4 minutes until golden brown. Remove with a slotted spoon, drain on paper towels, and serve hot with dip.
