Gluten-Free Chex® Blooming Onions with Bacon Chipotle Dip

Use gluten-free Chex® cereal for a crispy blooming onion appetizer.
Ingredients:
  • 1/2 cup mayonnaise
  • 2 to 3 tablespoons chopped canned chipotle chiles in adobo sauce
  • 2 tablespoons crumbled cooked bacon
  • 1 cup Corn Chex™ cereal
  • 1 cup Rice Chex™ cereal
  • 1 cup rice-based gluten-free baking mix
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground red pepper (cayenne)
  • 1/2 teaspoon ancho chile powder
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1 cup milk
  • 2 eggs
  • 2 large sweet onions
  • Vegetable oil for deep frying
Instructions:
  • Combine the Dip ingredients in a small bowl, cover, and chill in the refrigerator until you're ready to serve.
  • Crush the cereals and combine them in a large bowl with the baking mix, salt, and spices. In a separate large bowl, whisk together the milk and eggs.
  • Trim and peel the onion, leaving the bottom intact. Make vertical cuts into the onion, being careful not to cut through the bottom, to create "petals." Coat the onion with cereal mixture, making sure to get the coating between the petals. Double-dip the onion in the egg mixture and cereal mixture for a well-coated finish before frying.
  • Continue the delicious process by repeating the action with the remaining onion, cereal mixture, and egg mixture.
  • Heat oil in a deep fryer or heavy saucepan to 350°F. Carefully place one coated onion at a time into the hot oil using a slotted spoon. Fry for 3 minutes, then turn the onion and fry for an additional 3 to 4 minutes until golden brown. Remove the fried onion with a slotted spoon and let it drain on paper towels. Serve hot with your favorite dipping sauce.
