Bloomin' easy vanilla cheesecake

Classic American vanilla cheesecake - a timeless favorite from Fifteen restaurant. Simply delicious!
Ingredients:
  • 150 g unsalted butter plus extra for greasing
  • 250 g digestive biscuits
  • 115 g caster sugar
  • 3 tablespoons cornflour
  • 900 g half-fat cream cheese (at room temperature)
  • 2 large free-range eggs
  • 115 ml double cream
  • 1 vanilla pod or ½ teaspoon vanilla extract
  • 1 lemon
  • 1 orange
  • 400 g cherries
  • 3 heaped tablespoons caster sugar
  • 1 swig port or whisky optional
  • icing sugar for dusting
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4, and grease and line a 24cm springform cake tin. Melt the butter, crush the biscuits, and mix in a bowl. Press into the tin base and bake for 10 minutes. Let it cool. Increase oven temperature to 200ºC/400ºF/gas 6. Combine sugar and cornflour, add cream cheese, and beat until creamy. Mix in eggs, cream, vanilla, lemon, and orange zest. Pour mixture onto biscuit base and bake for 40-45 minutes. Let it cool, then refrigerate until cold. Once ready to serve, cook cherries with sugar and water until softened. Drizzle over chilled cheesecake and dust with icing sugar. Enjoy!
