Irresistible BLT bruschetta, ideal for lunch or a laid-back get-together.
Ingredients:
  • 200g trussed cherry tomatoes
  • 16 slices prosciutto
  • 1 ripe avocado, halved, stone removed, peeled, thinly sliced
  • 1 bunch rocket leaves, ends trimmed
  • 8 slices ciabatta, toasted
  • 125ml caesar salad dressing
  • Shaved parmesan, to serve
Instructions:
  • Preheat your oven to 200°C. On a baking tray, arrange the tomatoes and drizzle them with oil. Season with salt and pepper. Lay the prosciutto in a single layer on another large baking tray. Bake both the tomatoes and prosciutto in the preheated oven for 15 minutes until the prosciutto is crisp and the tomatoes start to wilt. Remove from the oven.
  • On individual plates, arrange ciabatta slices neatly. Layer with creamy avocado, savory prosciutto, fresh rocket leaves, and juicy cherry tomatoes. Finish with a generous drizzle of Paul Newman's Own Creamy Caesar Dressing and optional shaved parmesan. Enjoy promptly.
