Elevate Aussie brunch with a carb-free twist! Enjoy crispy bacon, fresh lettuce, and juicy tomato in every bite.
Ingredients:
  • 6 shortcut bacon rashers, coarsely chopped
  • 12g (1/4 cup) panko breadcrumbs
  • 60g (1/4 cup) whole egg mayonnaise
  • 31.50 gm fresh lemon juice
  • 8 wedges iceberg lettuce
  • 250g cherry tomatoes, thinly sliced
  • Chopped fresh chives, to serve
Instructions:
  • In a non-stick frying pan over medium-high heat, sizzle the bacon in hot oil until golden brown, about 3 minutes. Transfer the crispy bacon to a paper towel-lined plate using a slotted spoon. In the same pan, toast the breadcrumbs until golden, about 1 minute. Then, transfer the breadcrumbs to a bowl.
  • In a small jug, whisk together mayonnaise and lemon juice. Arrange lettuce wedges on a plate, top with tomato slices. Drizzle with the lemon mayo, then sprinkle with crispy bacon, breadcrumbs, and fresh chives before serving.
